D-fenchone and L-Fenchone are the two enantiomers that make up the monoterpene Fenchone. D-Fenchone is found in the essential oils of Russian anise and fennel, as well as in thyme and licorice. L-Fenchone is derived from fennel and wormwood. Both the D and L forms of Fenchone have bracing flavors of citrus and camphor that are used to season beverages and desserts. D/L Fenchone’s pervasive scents of mint and pine are in widespread use in soaps and shampoos, perfumes and cosmetics.
